June 4th is national cheese day and this is important because cheese is one of the healthiest things we can eat. Of course, I’m talking about fermented cheeses which are high in natural bacteria. This bacteria benefits digestion as well as provides healthy flora of the intestines. People have been consuming cheeses for hundreds and hundreds of years and as a result there are literally thousands of different types of cheese available worldwide. Of course, like with everything, the food industry has been successful at adulterating this wonderful food, creating in its place highly processed products that in many cases cannot even be legally called cheese. You may have seen the term ‘cheese food’ on different labels. This is because the product does not actually contain significant amounts of cheese. The food industry has turned out products that should in fact, be called artificial cheeses. Cheese is high in protein, healthy fats, and beneficial bacteria, making it an ideal food for humans. Fermented aged cheeses are your best choice for obtaining all of these benefits. A variety of cheeses, together with a glass of red wine, is one of the healthiest meals you can have because red wine provides beneficial antioxidants, which the body needs to prevent damage from free radical activity. Many countries in Europe make a regular habit of having it with at least one meal every day. In many cases cheese with bread and wine makes up an entire meal. Next time you’re in your market or specialty store look in the deli section and likely is there you will find the higher quality naturally fermented cheeses, many of which have been imported from around the world.
